A twist on the classic egg salad sandwich.
I few months ago I went to Seattle and aside from the fact that I now want to live there, I also went to one of the most amazing bakeries I've ever been to. I loved it so much I went back again in the short time I was there. This is my take on their amazing egg salad sandwich.

EGG SALAD SANDWICH
Serves 1
INGREDIENTS:
2 eggs
1/4 tsp kosher salt and ground pepper
1 tbsp kewpie Mayo
1 tbsp relish
1 tbsp Dijon mustard
1 tbsp furikake seasoning
2 slices bread of your choice
DIRECTIONS:
Soft boil your eggs: gently add 2 eggs to boiling water. Reduce heat to medium-high and cook for 7 minutes. Drain eggs and immediately place in an ice bath to stop cooking.
Once eggs are cool enough to handle. Peel and then dice them. Place them in a bowl (Make sure to get as much egg yolk in your bowl as possible).
To that bowl, add the salt, pepper, and mayo. Stir to combine.
Add the relish, Dijon, and furikake. Stir to combine again.
Spread mixture onto your bread and enjoy!
