I don't like to waste food. Even food scraps. I compost what I can, but I also like to reuse scraps in other ways. The idea of using rinds to flavor water isn't something I came up with. People have been doing it forever. These are a lot like traditional Mexican agua frescas except I didn't add any sugar to mine. You can add sugar or honey in while you're boiling the water if you'd like a sweeter drink.
And yes! Your eyes didn't deceive you. That pineapple is indeed pink. Check out my TikTok videos for more on that!

PINEAPPLE WATER
Makes about 2 cups
INGREDIENTS:
Outer rind and inner core of 1 pineapple
Water
Sugar or honey (optional)
DIRECTIONS:
Place scraps in a pot and fill with enough water to cover almost all of the scraps (about 2-3 cups).
Bring this to a boil over high heat.
If you are adding sugar, once you get the mixture to a boil, add that in and stir to combine.
Reduce heat to medium-low and simmer 20 more minutes.
Remove from heat and carefully strain liquid into a container. Discard the solids.
Enjoy warm or cold!
