Transform your lotus root into spooky skulls to make this dish perfect for Halloween! 💀
These were the hit of my Halloween party this year! It does take a little bit of time to cut the shapes out but I just sat in front of a scary movie the night before and worked on them and then cooked this the next day. Just store them in some water in the fridge overnight.
STIR FRY WITH LOTUS ROOT SKELETONS
Serves 2-4 (as a side)
INGREDIENTS:
1 bag poached lotus root slices ( I get mine from HMart)
1 tbsp sesame oil
1 tbsp extra virgin olive oil
3 cloves garlic, minced
2 tbsp minced ginger
1 tsp kosher salt
2 tbsp sweet chili sauce (or to taste)
1/2 c chopped cilantro
Sesame seeds, for garnish
DIRECTIONS:
Cut lotus root into skull shapes (see my TikTok video for step by step instructions). Not all the lotus root in the bag will lend itself to this. You want the pieces that have distinct large holes (for the eyes) and small holes (for the nostrils). You'll need at least 1 1/2 c. of prepared lotus root for this recipe.
Boil prepared lotus root in salted water for about 3 minutes to cook further. Then drain and set aside.
While lotus root is boiling, heat the sesame and olive oils in a pan over medium heat. Once the oil is hot, add the minced ginger and garlic and cook about 2-3 minutes until they are aromatic but before the garlic browns.
Remove from heat and gently add in the lotus root and salt. Stir carefully to combine.
Add the sweet chili sauce and scallions. Carefully stir to combine again.
Serve topped with seseame seeds.
