STRAWBERRY CAKE POPS

Strawberry cake pops- made vegan!



Each month I host a cookbook club at my house. Everyone comes over with a dish/dishes they have made and we all get to try a bunch of food. Sometimes we have a theme- and the theme for February was: tea party. Everyone brought tea party food and one of my creations for the night were these cake pops. I have made regular cake pops in the past but I wanted to try to make them vegan this time.


I don't love baking so this recipe is super simple as it uses boxed cake mix. Did you know that most cake mix and frosting is already vegan? It's adding the egg that makes it not vegan anymore so in place of the egg and oil to make the cake- I used applesauce and coconut milk.


Here are the main ingredients I used (not including applesauce, coconut milk, edible rosebuds):



I will be honest...I didn't love this vegan chocolate so I would recommend using another brand when you make yours. Other than that, I love how these turned out!


STRAWBERRY CAKE POPS


Makes around 20 cake pops


  1. Bake cake according to the box instructions until it is cooked through and a toothpick inserted comes out clean. The only difference is: in place of adding eggs or oil, add 1/2 c. unsweetened applesauce and 1 c. of any non-dairy milk you like.

  2. Once cake is ready, allow it to cool to the touch.

  3. Mix together the cake and some of the frosting (starting with 1/4c frosting at a time) until the mixture forms a very thick batter -thick enough that you can roll it into balls without it falling apart but not super mushy.

  4. Set these on parchment paper in a tray and let them sit in the fridge for a few hours or overnight to harden up a bit.

  5. When you're ready to coat them in chocolate, you're going to use a double boiler method. Get a small pot filled with about a cup of water and bring to a boil. Break the chocolate up into pieces and put it in a heatproof bowl that fits over that pot but doesn't directly touch the boiling water. Stir occasionally until chocolate is just melted and then remove bowl from heat.

  6. While the chocolate is melting, insert a sturdy straw or popsicle stick into each cake pop about 3/4 of the way through. Keep the parchment paper these were sitting on as once they're coated in chocolate- you'll want to set them back on there to cool off.

  7. Once the chocolate is ready, dip each cake pop into chocolate. I used some of the melted chocolate as a glue at the end to stick on a tiny rosebud to each cake pop.

  8. Allow them to cool until chocolate has hardened.

  9. Enjoy!
