STUFFED PEPPER JACK-O-LANTERNS

My spooky take on stuffed peppers. My favorite thing about making these for dinner is that the leftovers are also great for lunch the next day.



I love making these around Halloween. Sometimes it's hard to find spooky recipes that are savory rather than sweet but this fits the bill. They're fairly simple to make and filling. One word of caution...beware of where your fingers are when you're cutting into these peppers!

STUFFED PEPPER JACK-O-LANTERNS


Makes 4


INGREDIENTS:


4 large orange bell peppers

3 tbsp extra virgin olive oil, divided

1 Tbsp kosher salt (taco seasoning would also be good)

1-5.6 oz package Knorr Spanish rice mix

1 c. salsa

1-15 oz can black beans, drained and rinsed

1 c. shredded cheese of your liking


DIRECTIONS:


  1. Preheat oven to 425 F.

  2. Meanwhile, cut a lid for your peppers and then remove the seeds inside.

  3. Cut two eyes and a mouth for each pepper. (Make sure they're not too big so filling doesn't fall out of the peppers).

  4. Place peppers in a baking sheet (cut side down) along with their tops. Drizzle 2 tbsp of the oil on top and season with the salt.

  5. Bake 15-20 minutes or until peppers are cooked but not too soft (you want them to be able to holdtheir shape)

  6. While peppers are roasting in the oven, make the Spanish rice according to the package instructions (adding 1 tbsp of oil). Once the rice is cooked, add the salsa and black beans and stir to combine.

  7. Remove the peppers from the oven and carefully flip them so the cut side is up.

  8. Evenly fill the peppers with your rice mixture then evenly top with cheese.

  9. Place dish back in the oven and bake about 5 more minutes or until cheese has melted.

  10. Serve with top of pepper back on so it resembles a pumpkin.
