Shirazi salad, cottage cheese, avocado, and olives-topped with everything but the bagel seasoning
This is an easy and quick meal with bright flavors that will fill you up while getting in your protein and fiber. Shirazi salad is an Iranian salad with an olive oil and lemon juice dressing. Pair that with some cottage cheese (Good Culture is the brand- it is HANDS DOWN the best cottage cheese on the market), half of a large avocado, and caselvetrano olives. They are my favorite and have the most perfect buttery texture and flavor.
QUICK & EASY HIGH PROTEIN AND FIBER LUNCH
Ingredients (serves 1):
½ english cucumber, chopped
1 roma tomato, chopped
2 tbsp chopped red onion
1 tbsp extra virgin olive oil
1/2 lemon, juiced
kosher salt, pepper, dried mint, and everything but the bagel seasoning-to taste
1/2 c. whole milk cottage cheese
1/2 or 1 whole avocado
handful caselvetrano olives
Directions:
In your bowl, combine your chopped cucumber, tomato, and onion. Add the olive oil and lemon juice, as well as some salt, pepper, and dried mint. Stir to combine.
Push you salad mixture to one side of the bowl and add the cottage cheese and avocado. Top these with a little everything but the bagel seasoning.
Add a few olives to the bowl (beware of the olive pits!)
