Scrambled eggs mixed with cottage cheese with warm toast and a side of pickles
This is a great way to bulk up your eggs for a quick, filling meal. I like to serve it with some bread and pickles. For some reason, pickles and eggs always go together in my world.
SCRAMBLED EGGS WITH COTTAGE CHEESE
Ingredients (serves 1):
1 tbsp extra virgin olive oil
2 eggs
1/2 c. cottage cheese
2 slices bread, toasted
few small pickles
kosher salt, pepper, and furikake seasoning, to taste
Cholula chile garlic hot sauce (my favorite), to taste
Directions:
Heat oil in a pan over medium heat
Once oil is hot, swirl it around to coat the pan.
Add your eggs and whisk to scramble. Season with salt and pepper.
Cook for 2-3 minutes until they reach a soft scramble, then add the cottage cheese and stir to combine. Cook another minute to warm up the cottage cheese.
Serve alongside bread and pickles, topping with eggs with furikake seasoning and hot sauce.
