Pasta with grated eggs and feta cheese, olive oil, lemon juice, and lemon pepper.
This is a recipe my grandmother would make for my mom, and my mom would make for me. It is the perfect balance of savory (from the eggs) and salty (from the feta), with a little bit of lemon juice to balance out the flavors and brighten up the dish.
PASTA WITH EGGS AND FETA CHEESE
Ingredients (serves 1-2):
2 eggs
4 oz pasta noodles of your choice
kosher salt for pasta water
2 tbsp extra virgin olive oil
1/2 lemon, juiced; or to taste
1 tbsp lemon pepper
3 tbsp crumbled feta cheese
Directions:
Bring a small pot of water to a boil. Carefully add the eggs, reduce heat to medium high, and boil eggs for 8 minutes. Drain eggs and immediately add to an ice bath to stop cooking. Set aside
Bring a pot of salted water to a boil, cook pasta to al dente. Drain.
While the pasta is cooking, peel and grate the eggs.
Pour drained pasta into your serving bowl and add add the olive oil, lemon juice, lemon pepper, feta, and grated eggs.
Stir to combine, adding more olive oil and lemon juice if pasta is too dry.
