Ramen noodles in vegetable broth with assorted vegetables
I love all soups and ramen is one of my favorites. There are so many different ways to make ramen- it's endless really. This was a quick dinner that I made for myself the other night using some veggies I had on hand but you can add whatever you'd like. If the vegetable is particularly tough, let it cook for a few minutes before adding your noodles in.
VEGGIE RAMEN
Serves 1
INGREDIENTS:
-2 c. vegetable or other plant-based broth
-1 package ramen noodles (discard broth packet)
-handful of mushrooms (I used Snow White mushrooms here, enoki or baby bella would also be great)
-chopped baby bok choy (about 3 or 4)
-handful of baby corn
DIRECTIONS:
In a pot, bring broth to a boil. ( the ramen packet I used had a dehydrated vegetable packet that o added but most ramen doesn't come with this)
Add the mushroom and bok choy and cook for about a minute. Then add the noodles and baby corn. Cool for about 2-3 more minutes until noodles are cooked through, stirring occasionally.
